Welcome to Braydeston Knives! I'm a Norwich native who, over the last 5 years, has been hand crafting kitchen knives for chefs and home cooks all over Norfolk and the rest of the UK. These knives are made from the highest quality steels and woods from Europe, North America and Japan. The steels are selected for their superior hardness, edge holding capabilities and ability to be easily maintained with simple sharpening techniques.  ​

What makes a handmade knife special?

As their name suggests, mass-produced kitchen knives are designed to be made in vast quantities for as little as possible. Unfortunately, they are not necessarily made to give the very best experience to the user. While many can be great, the benefit of being a bespoke craftsman making one knife at a time is that I can take full advantage of a given steel's properties to get the very best out of it. Through careful heat treatment processes and years of refining my designs, Braydeston Knives are able to offer a vastly superior product and user experience, Sharper, more beautiful and truly handcrafted.

As a maker, I take many design cues from Japanese knives, globally renowned for their elegance and functionality. The classic octagonal handle or "Wa" handle caters to each user's unique grip preference. Japanese-style knives are also lighter and thinner than their Western counterparts, which often feature large, forged steel bolsters. This may throw off new users who are used to heavy European styles. However, with a thin bevel, at less than 0.1mm behind the 15° cutting edge, working with a Braydeston Knife feels truly effortless. 

Wood for the handles is taken through a process of stabilisation. The wood is dried to as close to 0% moisture as possible and then submerged in a specially formulated resin. The wood blocks are then placed in a vacuum chamber to have the air drawn from every possible void within the microscopic grain fibres. Once the vacuum is released the resin is drawn into the wood to completely saturate it. The next step is to bake the wood blocks at a precise temperature to plasticise the liquid resin, increasing the material's density and mechanical properties. When it is finally shaped into a handle, the resulting material makes for a long-lasting, water-resistant and, not least, beautiful finish.


FAQ

How to look after my Braydeston Knife?

The best way to keep your knife in top condition is to clean with warm soapy water in a timely manner between use. Dont keep it in a draw with other cuttlery as this may damage the edge. Best is a knife rack or stand but if you dont have one just give it its own slot in the draw and dont mix it in with others.

  • Is my knife dishwasher safe?

    No. putting a knife in a dishwasher is the fastest way to ruin it, that goes for any kitchen knife! ​​

  • How is my order dispatched?

Braydeston Knives ships within 1 working day using a tracked 24 Service with Royal Mail. They are individually packaged in branded, foam lined boxes. This includes a protective sleave and a specification and care sheet explaining steel, handle material, hardness and edge angle. All knives are sent via an age verified service. This means proof of age will be required before the parcel is handed over.​

  • What is the warranty on my knife?

Its a matter of pride to me that your knife is in the best shape it can be, As such all braydeston knives have a limited lifetime warranty.  this covers issues such as bent or snapped tips and chips or handle issues of any kind that have occured during appropriate use. If, however, its been put in the dishwasher and the handle has cracked, this is not covered and will need to be replaced at cost.   • What is the Return Policy​

We offer refund and/or exchange within the first 14 days of Delivery. Your item must be unused and in the same condition that you received it. The item must be in the original packaging. To complete your return please send to the follow address:
