Takefu SG2 - This is one of the finest kitchen knife steels out there! Produced through the process of powder metallurgy which differs from the traditional hot rolled process which vastly improved the micro structure of the steel. This, along with the high percentage of carbon (1.4%), Molybdenum (2.4%) and Vanadium (2%) make for extremely durable and wear resistant cutting edge. This variant has also been clad in 64 layers of differential stainless cladding which prior to heat treatment I manipulate and hammer out so that once ground to its final form, the layers swirl and flow along the knife leaving a unique and beautiful pattern.
